Ingredients

For the Chicken:

  • 2 large boneless, skinless chicken breasts (halved lengthwise)
  • ½ cup all-purpose flour
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter

For the Marsala Sauce:

  • 1 cup cremini or button mushrooms (sliced)
  • 2 cloves garlic (minced)
  • ¾ cup Marsala wine (sweet or dry)
  • ½ cup chicken broth
  • ½ cup heavy cream
  • 1 teaspoon Dijon mustard (optional, for extra depth)
  • ½ teaspoon dried thyme (or 1 teaspoon fresh)
  • 2 tablespoons unsalted butter (for extra richness)
  • Fresh parsley (chopped, for garnish)

For Serving:

  • Mashed potatoes, pasta, or rice

Instructions

1. Prepare and Cook the Chicken

  1. Flatten chicken cutlets slightly for even cooking.
  2. Mix flour, garlic powder, onion powder, salt, and pepper in a shallow dish.
  3. Dredge each piece of chicken in the seasoned flour mixture, shaking off excess.
  4. Heat olive oil and butter in a large skillet over medium-high heat.
  5. Cook chicken for 4-5 minutes per side until golden brown. Remove and set aside.

2. Make the Marsala Sauce

  1. In the same pan, add mushrooms and cook for 3-4 minutes until softened.
  2. Stir in garlic, thyme, and Dijon mustard, cooking for 30 seconds until fragrant.
  3. Pour in Marsala wine, scraping up browned bits from the pan. Simmer for 2 minutes to reduce slightly.
  4. Add chicken broth and let simmer for another 2 minutes.
  5. Stir in heavy cream and butter, whisking until smooth and creamy.

3. Combine and Serve

  1. Return chicken to the skillet, coating it in the sauce. Simmer for 3-5 minutes until fully heated.
  2. Garnish with fresh parsley and serve hot over mashed potatoes, pasta, or rice.
