How to Make Authentic Turkish Gozleme

Turkish Gozleme is a delicious, savory flatbread stuffed with a variety of fillings like spinach, cheese, and seasoned meat. Cooked on a griddle until golden and crispy, it’s a popular street food in Turkey and is simple to make at home!


Ingredients

For the Dough:

  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup warm water
  • 2 tablespoons olive oil

For the Filling (Choose or Mix):

1. Spinach and Cheese:

  • 2 cups fresh spinach (chopped)
  • 1½ cups feta cheese (crumbled)
  • 1 cup mozzarella cheese (shredded)
  • 1 teaspoon black pepper

2. Ground Beef and Onion:

  • 1 lb ground beef or lamb
  • 1 small onion (finely chopped)
  • 1 teaspoon paprika
  • ½ teaspoon cumin
  • ½ teaspoon black pepper
  • Salt to taste

Instructions

1. Prepare the Dough

  1. In a large bowl, combine flour and salt.
  2. Gradually add warm water and olive oil, mixing until a soft dough forms.
  3. Knead the dough on a floured surface for 5-7 minutes until smooth.
  4. Cover with a damp cloth and let it rest for 30 minutes.

2. Prepare the Filling

For Spinach & Cheese:

  1. In a bowl, mix spinach, feta, mozzarella, and black pepper.

For Beef & Onion:

  1. In a skillet, cook ground beef with onion, paprika, cumin, black pepper, and salt until browned.
  2. Allow to cool slightly.

3. Assemble the Gozleme

  1. Divide the dough into equal pieces and roll each into a thin circle (about 10 inches).
  2. Place your chosen filling on half of the dough, leaving space around the edges.
  3. Fold the dough over the filling to form a half-moon shape and press the edges to seal.

4. Cook the Gozleme

  1. Heat a non-stick skillet or griddle over medium heat.
  2. Brush the outside of the dough lightly with olive oil.
  3. Cook each Gozleme for 2-3 minutes per side or until golden brown and crispy.

5. Serve and Enjoy

  • Slice into pieces and serve warm with a wedge of lemon and yogurt dip on the side.
