How to Make Buffalo Chicken Stuffed Peppers

If you love buffalo chicken, you’ll go crazy for these buffalo chicken stuffed peppers! Juicy bell peppers are filled with shredded chicken, spicy buffalo sauce, and creamy cheese, then baked to perfection.


Ingredients

  • 3 large bell peppers (halved and seeds removed)
  • 2 cups cooked shredded chicken
  • ½ cup buffalo sauce
  • ¼ cup ranch or blue cheese dressing
  • 1 cup shredded cheddar cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup shredded mozzarella cheese (for topping)
  • 2 tablespoons chopped green onions (for garnish)

Instructions

1. Prep the Peppers

  1. Preheat oven to 375°F (190°C).
  2. Slice bell peppers in half and remove seeds.
  3. Lightly brush with oil and place in a baking dish.

2. Make the Buffalo Chicken Filling

  1. In a large bowl, mix shredded chicken, buffalo sauce, ranch (or blue cheese dressing), cheddar cheese, garlic powder, onion powder, salt, and black pepper.
