How to Make Authentic Turkish Gozleme
Turkish Gozleme is a delicious, savory flatbread stuffed with a variety of fillings like spinach, cheese, and seasoned meat. Cooked on a griddle until golden and crispy, it’s a popular street food in Turkey and is simple to make at home!

Ingredients
For the Dough:
- 3 cups all-purpose flour
- 1 teaspoon salt
- 1 cup warm water
- 2 tablespoons olive oil
For the Filling (Choose or Mix):
1. Spinach and Cheese:
- 2 cups fresh spinach (chopped)
- 1½ cups feta cheese (crumbled)
- 1 cup mozzarella cheese (shredded)
- 1 teaspoon black pepper
2. Ground Beef and Onion:
- 1 lb ground beef or lamb
- 1 small onion (finely chopped)
- 1 teaspoon paprika
- ½ teaspoon cumin
- ½ teaspoon black pepper
- Salt to taste


Instructions
1. Prepare the Dough
- In a large bowl, combine flour and salt.
- Gradually add warm water and olive oil, mixing until a soft dough forms.
- Knead the dough on a floured surface for 5-7 minutes until smooth.
- Cover with a damp cloth and let it rest for 30 minutes.
2. Prepare the Filling
For Spinach & Cheese:
- In a bowl, mix spinach, feta, mozzarella, and black pepper.
For Beef & Onion:
- In a skillet, cook ground beef with onion, paprika, cumin, black pepper, and salt until browned.
- Allow to cool slightly.
3. Assemble the Gozleme
- Divide the dough into equal pieces and roll each into a thin circle (about 10 inches).
- Place your chosen filling on half of the dough, leaving space around the edges.
- Fold the dough over the filling to form a half-moon shape and press the edges to seal.
4. Cook the Gozleme
- Heat a non-stick skillet or griddle over medium heat.
- Brush the outside of the dough lightly with olive oil.
- Cook each Gozleme for 2-3 minutes per side or until golden brown and crispy.
5. Serve and Enjoy
- Slice into pieces and serve warm with a wedge of lemon and yogurt dip on the side.
